THE KOKORO STORY
Kokoro - meaning “heart” in Japanese is an intimate dining experience designed to bring guests closer to both the food and the people who create it.
Born from a collaboration between FYTE Hospitality , founded by Tamer Elkhayat and Faisal Yabroudi and Chefs Daniel Lee and Patrick Pham, Kokoro reimagines the hand roll bar concept for Dubai.
Every dish is prepared fresh to order, with chefs slicing, seasoning, and rolling each hand roll in front of guests, creating a warm, personal, and highly interactive dining experience.

NIGIRI & SASHIMI
Nigiri - Expertly sliced raw fish resting atop a tender pillow of perfectly cooked sushi rice. Enhanced with a subtle brush and a dab of wasabi applied with the utmost restraint to allow its natural essence to shine.
Sashimi - A cornerstone of Japanese cuisine presented in pristine simplicity and unparalleled freshness. Sashimi showcases the purest expression of raw fish meticulously sliced into thin pieces.
THE FOUNDING MASTERS
Kokoro Handroll Bar was developed in 2024 by FYTE Hospitality - founded by Tamer Elkhayat and Faisal Yabroudi - in partnership with Chefs Daniel Lee and Patrick Pham, to establish the region’s first dedicated hand roll bar, launching in Dubai with a clear roadmap for international expansion.
Daniel lee
Chef Daniel Lee's culinary journey began at the age of 16, where he started working in kitchens, nurturing his passion for cooking.
To further enhance his culinary skills, he enrolled in the Culinary Arts program at the renowned Le Cordon Bleu in Los Angeles.
During his time at Le Cordon Bleu, Chef Daniel Lee underwent rigorous training, focusing on classical culinary techniques and the art o gastronomy.
patrick pham 
Patrick Pham's culinary journey began with his studies at the Art Institute of Houston, where he focused on culinary arts.
After graduating, he embarked on his professional career by joining Uchi, a renowned restaurant in Houston, Texas.
He became part of the opening team, showcasing his dedication and passion for the culinary arts from the start.
